Mitake Shuzo is a shochu producer on Yakushima island in Kagoshima, Japan, founded in 1958 (Showa 33). It makes the honkaku imo (sweet potato) shochu brand 'Mitake', using spring water from the island's mountains, sweet potatoes and rice koji. Its range includes standard, cask-strength and island-only bottlings, as well as private-label versions for local liquor shops.
