Umetsu Shuzo is a sake brewery in Tottori, Japan, founded in 1865 (Keio 1), and it describes itself as a small, hand-crafted operation. It produces sake, shochu (including a sweet potato shochu) and plum liqueur, and it has stopped adding brewer's alcohol so that all its sake is made from only rice and rice koji. The company also offers brewery tours by reservation.
