Don Quixote Distillery & Winery is a small-batch producer of spirits, wines, ports, extracts and chocolates, with distillery and winery operations in Los Alamos and a tasting room in Santa Fe, New Mexico. The company uses locally sourced ingredients such as New Mexico blue corn, native herbs and regional grapes and orchard fruit. Its stills were designed for high-altitude distilling.
