Cavas del Valle is a boutique winery in the high Elqui Valley of Chile, operating from a 19th-century adobe house at about 1,100 metres above sea level. It makes handcrafted wines, including sparkling wines and a range of reds, rosés and Moscatel-based wines, and offers guided tours and tastings. The business is family-run and was founded in 1996 by a couple who established the vineyard in an area previously known mainly for pisco and table grapes.
